West Indian Lime

Also known as the Key Lime or Bartenders Lime, the West Indian Lime is a smaller, seedier, and more intensely flavoured lime than Tahitian - the variety behind Key Lime Pie and the drink orders that call for proper lime. The fruit is small and round, best picked while still green, with a sharp, aromatic juice that's notably more punchy than Tahitian. It thrives in Perth's warm climate and is the better cooking lime when you want a strong, true lime hit rather than a mild background note. Full sun, well-drained soil. More heat-loving and frost-sensitive than Tahitian - plant in a sheltered spot in cooler parts of Perth.
