Lemon - Yuzu

Yuzu is the Japanese citrus that spent a decade on restaurant menus and is now finding its way into Perth home gardens - and for good reason. It looks like a small, rough-skinned lemon but the flavour is entirely its own: floral, tart, intensely aromatic, somewhere between lemon, lime, and mandarin with a complexity that no other citrus matches. It is used almost entirely for its zest and juice rather than eating fresh, and a small amount goes a long way - a tablespoon of yuzu juice or a teaspoon of zest transforms a dressing, a dessert, or a drink. The tree is cold-tolerant and ornamental, with glossy foliage, though it does have thorns. Full sun to part sun. Well-drained soil. Expect 3-5 years to first fruit from a grafted tree. Feed with citrus fertiliser in spring and autumn.
